Hi all how are you?  Here is your weekly newsletter to keep you up to date with everything that is happening in the studio.

Today is a sad day as today is the day that 10 years ago I lost one of my closest friends Yaz to lung cancer, she was very young, she was only 41.  She was an amazing personality always full of fun and laughter, she had many, many friends – in fact if you used to walk up Mostyn Street in Llandudno it would take hours as she would stop and talk to that many people.  I really miss her and wish she was still here.

Now that I have freed some time up for myself from the studio I have really been cracking on with Utility Warehouse, I have just recruited 2 new distributors who I think are going to be amazing within the business and quickly make themselves a nice extra income.  It’s exciting having a little team to work and share with, I am really loving it – and best of all for me it is all stress free!!!  I have also saved a friend £329 on her utility bills which always puts a smile on my face.

As most of you know now there has been some changes to the timetable at the studio, but I am sorry to say that another 2 classes have now finished – the Yoga class with Laura Bell on Tuesday mornings and the Tai Chi with Eirian Harris on Friday mornings – this is due to lack of attendance.  It is such a shame, and I am baffled as to why these 2 classes weren’t busier – these instructors teach at other locations and have busy classes – what is it about Llandudno?  Is it because there are so many leisure centres within a 5 mile radius and because they are supplemented by the government they can make their prices super cheap?  It is very frustrating but these instructors can not afford to carry on teaching classes that are not busy.

Recipe of the Week

Blueberry Muffins.

 

A healthy muffin using no highly processed white flour or sugar! Fast to make and freeze well. Great for breakfast, lunch or snacks.   serves 6   ready in 30 minutes   ingredients

  • 25g olive oil
  • 2 free range eggs
  • 100g ground almonds
  • 2 tbsp blueberries
  • 1 tsp baking powder (gluten free if on a gluten free diet)
  • 3 tsp Agave Syrup

instructions

  1. Whisk the olive oil, Sweet Freedom and the eggs together.
  2. Add the dry ingredients and mix together thoroughly.
  3. Stir in the blueberries carefully, you want an even distribution of them, but not too much squishing!
  4. Put into small individual ramekin dishes and microwave them individually for about 1 – 2 minutes each, depending on the size of your ramekins and your microwave power.
  5. OR you can bake in the oven in a non-stick muffin tin for about 15 minutes. Preheat the oven to 190C / 375F / Gas 5. Whichever cooking method you choose be careful not to overcook the mix – the muffins are ready when light and springy on top.
