Hi all how are you?  Here is your weekly newsletter to keep you up to date with everything that is happening in the studio.

Wow it has been a couple of weeks since I last wrote my newsletter, so sorry for missing a week but soooo much has happened.  I went to London for a friend’s wedding – you can see the picture above of the tequila shooter girl and guy that I arranged for them – they went down a storm handing out free tequila and sambuca shots.  They brought back so many memories as I used to do the job – I used to have so much fun, mingling, making lots of money and drinking lots of tequila!!!!  Ahh happy days!!

The very next day I went to Cheltenham for MAD day, now most of you probably don’t know what MAD day is.  It is a day organised by Utility Warehouse for all of their distributers and stands for Massive Action Day – I had only had 3 hours sleep due to not getting in from the wedding party till 4.30 a.m. and then having to get up at 7.30 a.m to catch the 8.30 a.m train – it was tough let me tell you, when that alarm was going off I was thinking to myself “no one will miss me if I am late” but I dragged myself out of bed and made the train (it was the fastest get ready ever)  After 3 bottles of water and a cheese sandwich – I started to feel normal.

I can honestly say that is was AMAZING, had it been boring I would have been asleep no doubt.  I met my brother and Dad there, there were about 3,000 people there and the energy was electric.  The speakers on the stage were fantastic, telling their stories and making me laugh out loud.  There was also lots and lots of recognition going on for all distributors that had achieved new levels, the exciting one for me was watching all the people that had just received their free brand spanking new mini – I soooo want one of those.  Anyway this day really made me take stock of myself and my life and made me realise that I am working way too hard, having way too little free time to enjoy time with my family and friends and that I am doing stuff I really don’t enjoy – so I made a decision then and there to make the changes.

So I have – as of next week I will no longer be teaching the early morning bootcamp classes – as much as I enjoy the session once I am there and I really love my members I HATE getting up at 5.45 a.m. – this is just not a good time of day for me.  I also don’t want to be working every evening of the week, so I have got rid of the classes that had become the quietest and unfortunately for the people that came religiously that means that there is no longer a Fighting Fit class on a Monday night and also no Friday night class.  I was going to get rid of the Saturday morning Body Pump class too, but since mentioning it in class a lot of people have said that they really don’t want that one to go and have promised faithfully that they will make sure they attend – so for the month of October I am giving it a trial – if people truly mean it when they say that they will attend then it will stay, if attendance doesn’t get back to where it once was then I am afraid it will have to go!!!!  So Operation Save Saturday Morning Body Pump has started!!!

My brand new Fat Loss Fortnight program has just ended and the results have been amazing and I am so happy – I have had one lady lose a stone and 14 inches, another lose a stone and 10 inches and another lose half a stone and 12 inches.  These results can be achieved by anyone, as all you have to do is follow the plan, and if once you finish the plan you don’t go crazy and undo all the good work the pounds and inches will stay off.  It is a good healthy kick start into the way you want to look and feel, and as it is only 14 days – everyone can manage 14 days.  So if you truly want to change the way you look and feel and are not one of those people that just sit there and moan but don’t actually do anything about it – then get yourself booked on to the next Fat Loss Fortnight which starts Monday, 8th October.

Some of you may know Claire Kite and Paula Roberts – they are the Zumba queens of Llandudno and run Moverz and Shakerz Zumba party nights – anyway I saw them down at the Bandstand on Sunday raising money for St. Davids Hospice – what a great sight, lots of people having fun outdoors.  Anyway they are running a Zumba club night this coming Saturday so if you fancy a night out with a difference then why not try this.  It is being held in The Old Hall, Penrhyn Bay and starts at 8.00 p.m. until late.  You can get your tickets from the Chocolate Box in Craig y Don, the Knight Shop in Conwy or Face 2 Face in Colwyn Bay or you can just contact either girl on Facebook.

300g rice noodles
1 tbsp Groundnut oil
1 50g Sugar snap peas
8 Boneless, Skinless free range chicken thighs cut into pieces
3 tbsp sweet chilli sauce
1 tbsp toasted sesame oil
2 tbsp soy sauce
1 garlic clove, crushed
1 red chilli, deseeded and thinly sliced
75g natural peanuts, toasted in the oven for 8 minutes and chopped
Small bunch each of fresh mint and coriander leaves

Put rice noodles in a large bowl and cover generously with boiling water, then leave for 15 minutes until tender, stirring occasionally to separate the noodles. Drain and rinse under cold running water.

Meanwhile, in a wok/ Frying pan heat ground nut oil till very hot, then fry the sugar snap peas for 2 minutes, remove and set aside.

Season chicken, Add to wok/frying pan and fry for 3 minutes until golden, draining off any fat, add sweet chilli sauce and continue to fry until the chicken is cooked and the sauce is thickened and sticky,

In a large bowl, whisk the toasted sesame oil, soy sauce, juice from 1 and a half limes, fish sauce, garlic and chilli to make the dressing. Add the noodles to the bowl with the sugar naps, spring onions, cucumber, peanuts and herbs, then toss to coat. Add to the wok/ frying pan and stir through the sticky chicken.

Set aside a third for lunch, Serve on a plate with the remaining lime cut into wedges.

For next day lunchbox.

Store left over chicken noodle salad overnight in the fridge.

Next day spoon onto 2 flat breads, then top with sliced gherkins and a dash more chilli sauce, Roll up and eat!

Vegetarian option

Enjoy noodles without the chicken, or fry some diced tofu in a little groundnut oil until crisp then stir through.
